Crushing & Malaxing
Crushing and malaxing form the mechanical heart of the olive oil mill, where olives are transformed into a paste to release their oil. High-speed crushers (hammer mills or disc crushers) efficiently grind whole olives - pits and all - into a uniform olive paste, ensuring that oil cell structure is exposed for maximal resultant yield. The paste then moves into malaxers, which are jacketed kneading tanks that slowly churn the olive paste. This malaxation process coalesces tiny oil droplets, thus enabling better separation and working with the endogenous enzymes. It is critical for oil yield and quality: both the time and the temperature of malaxing are carefully controlled. Our advanced malaxers feature precise temperature regulation to comply with cold extraction standards  - preventing quality loss from overheating. The closed, stainless steel malaxing units also limit oxidation by excluding excess air. Modern crushing and malaxing machinery ensures a high-yield paste while preserving the olive’s aroma, flavor, and polyphenols essential for premium oil quality and respecting the parameter for around 27 °C as required for extra virgin olive oil extraction.
