MORI-TEM Cultivar 750 2GV / 3GV – Olive Oil Extraction Lines

Fully automated 750 kg/hour olive oil extraction systems with temperature and speed regulation for premium EVOO production.

The MORI-TEM Cultivar 750 2GV and 3GV models are advanced continuous or semi-continuous olive oil extraction systems built for professional mills and cooperatives producing high-quality extra virgin olive oil.
Every component in the Cultivar SMT range is engineered for low-temperature processing, rapid throughput, and precise temperature and speed control, ensuring total flexibility for any olive variety and processing condition.

Each configuration features MORI-TEM’s vertical malaxing technology, the FLAVOUR knife crusher with anti-heating channels, and the DMT decanter for gentle separation without overheating.
The system supports automated temperature regulation (5 °C – 40 °C) via the Hot-Cold Unit and can be supervised through PLC 4.0 control for full traceability, recipe creation, and data logging.

Uses – For Professional Olive Oil Producers and Cooperative Mills

The Cultivar 750 Series is designed for mills requiring efficient, precise, and hygienic extraction of premium extra virgin olive oil.
It provides reliable continuous operation, adaptable batch management, and consistent control of temperature, oxygen, and residence time.
Operators can fine-tune every processing stage—from crushing and malaxing to decanting and filtration—ensuring aromatic stability, polyphenol retention, and clean oil output suitable for direct bottling.

Frequently Asked Questions

The CULTIVAR series is designed for premium-quality extra virgin olive oil production, with each model engineered to provide precise control over temperature, oxygen, and processing speed. Every stage—from olive reception to final oil filtration—is automated and modular, allowing the line to adapt to different olive varieties and production volumes.
According to the catalogue (page 5), CULTIVAR plants are built for medium to large producers and allow temperature and speed regulation at every phase, ensuring maximum flavour development and oil stability.
CULTIVAR lines use a multi-stage cleaning process to remove soil, leaves, and debris before crushing.
As shown on pages 6–8 of the catalogue, the olives are:
  • Collected and weighed using load-cell hoppers and belt elevators,
  • Cleaned by rotary leaf removers that remove up to 99% of debris,
  • Washed using IDROLAVA systems, where air and water flow tangentially to preserve olive integrity, and
  • Dried with air jets that eliminate residual water to prevent dilution during crushing.
This pre-processing ensures uniform olive condition, essential for producing stable, aromatic oil.
The CULTIVAR line employs the FLAVOUR crushing system, which uses hollow knives and anti-heating channels to minimise temperature rise and enhance aromatic compound formation. The impeller operates between 2000–4000 rpm, and the grid is automatically cleaned during operation to prevent clogging.
The vertical malaxers (GV series) feature vacuum-assisted headspace control and independent thermal jackets, allowing continuous or batch processing with up to 30% energy savings. These units maintain the ideal enzyme activity range (15–25°C), ensuring optimal flavour formation.
Extraction is carried out using two-phase DMT decanters, which prevent overheating and are easily washable. The Backdrive system on models like DMT_12 allows independent auger and drum speed control, optimising separation efficiency without heat increase.
According to page 18, the unidirectional flow design increases throughput by 30% compared to bidirectional models and reduces energy consumption. The resulting oil can go directly to filtration, bypassing the separator if desired.
Because it combines precise thermal control, low-oxygen processing, and automated quality supervision in one cohesive system. The CULTIVAR range focuses on preserving flavour, polyphenols, and stability, while offering energy efficiency and full traceability.
With its Italian engineering and modular design, it represents the benchmark technology for consistent high-quality extra virgin olive oil production.
