Olives are blanched in this machine before being washed and stored in tanks for fermentation. Used for both green & black olives.
Helps to separate the pit of the olive from the flesh, making pitting easier.
Blanching can help preserve fruit, killing yeasts and vegetative bacteria.
Can speed up the diffusion of substrates during the processing of olives in brine - hence shortening fermentation time.
Also available in a production line with elevator, hopper and filling machine.
